TASTING:

The great Clos Rousseau is to Santenay what Clos Roussots is to the Maranges.

Neighboring each other, they make the transition from the fleshy structure of the Santenay to the strong character of the Maranges.

You will find a very ripe nose of the beautiful Climates harvested at maturity, full of black fruits and spices. The deep and full palate suggests a good aging potential.

DEVELOPMENT:

Manual harvest and sorting in the vineyard, transport in low volume containers.
Maceration of 15 to 19 days in thermo-regulated concrete vats with cold pre-fermentation maceration of 3 to 5 days.
The vats are reassembled or drawn according to the stage of fermentation and the feeling of the tasting.
Aging 16 to 18 months: 12 months in oak barrels and 6 months in vats.
The reds are neither filtered nor glued.

FOOD / WINE PAIRING:

It will go perfectly with a sirloin of beef, a rack of veal with chanterelles or with a veal entrecote.
